Cider Pairing Dinner

A Cider Pairing Dinner with Chef Matthew Lanes.

The evening will begin with a Pollinator Amaro Cider cocktail, followed by a five course dinner in our Tasting Room featuring seasonal local ingredients, a seafood forward menu, and accompanied by a jazz duo.

The menu:

Oysters Rockefeller
Broiled Pemaquid Oysters topped with spinach, bacon, shallots, and thyme in a anise cream reduction

Fluke Crudo
Served w/ frisée | shaved fennel | cucumber salad

Granny Smith apple sorbet

Roasted Halibut
Served with roasted pepper beurre blanc | fingerling potatoes | sautéed spinach

Chocolate Almond Tart

From sous chef at the renowned Raoul’s in NYC to working on a farm in France and eventually moving to the Catskills where he ran Matthew’s on Main in Callicoon for 17 years, Chef Matthew brings his unique experience to Seminary Hill for a special menu available for one night only.
